Chilli Vegetable Skewers

Vegetables skewed onto skewers, dipped in batter, deep-fried and served with a spicy sauce. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Chilli Vegetable Skewers

  • 2 medium Green capsicums seeded and cut into triangles
  • 7-8 Babycorns cut into dices
  • 8-10 Mushrooms stems removed and cut into halves
  • ¼ cup + 1 Cornflour/ corn starch
  • 1/4 cup Refined flour (maida)
  • 1 tablespo Oil
  • 1 tablespoon Garlic chopped
  • 1 inch Ginger chopped
  • 2 Green chillies chopped
  • 3 tablespoons Tomato ketchup
  • 1 tablespoon Red chilli sauce
  • a pinch Sugar
  • 1 teaspoon Vinegar

Method

  1. Skew the vegetables onto skewers in this order – babycorn, capsicum and mushrooms.
  2. Combine ¼ cup cornflour, refined flour and salt in a bowl. Add sufficient water to make a smooth batter.
  3. Heat sufficient oil in a kadai. Dip skewers in the batter and deep-fry in hot oil till golden and crisp. Drain on absorbent paper.
  4. Heat 1 tablespoon oil in a non-stick pan. Add chopped garlic, ginger and green chillies. Mix well and sauté for 2-3 minutes.
  5. Add tomato ketchup and red chilli sauce and mix well.
  6. Add little water, stir to mix and cook.
  7. Add water to 1 tablespoon cornflour and mix well to make a slurry.
  8. Add salt, sugar and vinegar in the pan and mix well. Add slurry, mix well and cook till the sauce thickens.
  9. Add skewers with fried vegetables and mix gently.
  10. Serve hot.
