Ingredients
- 1 large eggplant / brinjal , boiled
- 1 medium potato, boiled
- 2 tablespoons oil
- 1 small onion, chopped
- 5 garlic cloves, chopped
- 1/2 inch ginger, chopped
- 1 tomato, finely chopped
- 2-3 green chillies, finely chopped
- Salt to taste
- 2 tablespoons chopped fresh coriander leaves
Method
- Peel the brinjal and the potato and mash them. Heat oil in a non-stick pan. Add onions, garlic and ginger and saute for a minute on low heat.
- Add tomatoes and green chillies and saute for a minute. Add salt an d mashed brinjal and potato and mix well. Add coriander leaves and mix well. Serve hot.
