Ingredients 

  • 1 large eggplant / brinjal , boiled
  • 1 medium potato, boiled
  • 2 tablespoons oil
  • 1 small onion, chopped
  • 5 garlic cloves, chopped
  • 1/2 inch ginger, chopped
  • 1 tomato, finely chopped
  • 2-3 green chillies, finely chopped
  • Salt to taste
  • 2 tablespoons chopped fresh coriander leaves 

Method

  1. Peel the brinjal and the potato and mash them. Heat oil in a non-stick pan. Add onions, garlic and ginger and saute for a minute on low heat.
  2. Add tomatoes and green chillies and saute for a minute. Add salt an d mashed brinjal and potato and mix well. Add coriander leaves and mix well. Serve hot.
