History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Crab Tikki Recipe

  • Crab meat 1 cup

  • Medium onion chopped 1

  • Garlic finely chopped 1 teaspoon

  • Green chillies finely chopped 1 teaspoon

  • Garam masala powder 1 teaspoon

  • Red chilli powder 1 teaspoon

  • Turmeric powder 1/4 teaspoon

  • Lemon juice 2 teaspoons

  • Fresh coriander leaves finely chopped 1 teaspoon

  • Salt to taste

  • Dried breadcrumbs 2-3 tablespoons

  • Semolina for coating

  • Oil for shallow frying

  • Green chutney to serve

  • Onion rings to garnish

  • Lemon wedges to garnish

  • Fresh mint sprig to garnish

Method

Step 1

Take crab meat in a bowl, add onion, garlic, green chilli, garam masala powder, red chilli powder, turmeric powder, lemon juice, and coriander leaves and mix well. Add salt and mix well. Add breadcrumbs, mix and rest the mixture for 10-15 minutes.

Step 2

Divide the mixture into equal portions, shape them into round balls and flatten them slightly.

Step 3

Spread semolina on a plate roll the tikkis in it till they are well coated and place them on a plate.

Step 4

Heat sufficient oil in a non-stick pan, place the tikkis in it and shallow-fry, turning sides gently, till they are evenly cooked and golden on both sides. Drain on absorbent paper.

Step 5

Spread some green chutney in the centre of a serving platter, place the tikkis on either side of it. Garnish with onion rings, lemon wedges and mint sprig and serve hot.
