Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Cucumber and Moong Salad Recipe

  • Cucumber peeled 3 medium

  • Whole Green Gram blanched 2 cups

  • Oil 1 tablespoon

  • Garlic finely chopped 1 tablespoon

  • Red chilli powder ¼ teaspoon

  • Black pepper powder ¼ teaspoon

  • Chaat masala ½ teaspoon

  • Cumin powder roasted ½ tsp + fo

  • Salt to taste

  • Juice of 1 lemon

  • For serving

  • A few iceberg lettuce leaves

Method

Step 1

Heat oil in a non-stick pan. Add garlic and sauté till golden.

Step 2

Add sprouted moong, red chilli powder, black pepper powder, chaat masala, roasted cumin powder and salt.

Step 3

Switch off the heat and mix well. Transfer into a bowl. Grate cucumbers into the bowl. Add lemon juice and mix well.

Step 4

Place iceberg lettuce leaves in a serving plate and transfer the salad over them. Sprinkle some roasted cumin powder and serve.
