Deconstructed Vada Pav A modern twist on the iconic Indian street food, featuring separated elements like spiced potato patties, bread, and spicy chutney for a unique culinary experience. By Sanjeev Kapoor 08 Nov 2022 in Recipes Course New Update Main Ingredients French baguette , Sweet potato Cuisine Indian Course Snacks and Starters Prep Time 31-40 minutes Cook time 6-10 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients 8 slices of French baguette, toasted with butter till golden 1 teaspoon oil ½ teaspoon mustard seeds 5 curry leaves 1½ tablespoons ginger-garlic-green chilli-coriander leaves paste ½ teaspoon turmeric powder 5-6 medium sweet potatoes, boiled, peeled and roughly chopped Salt to taste Green chutney as required Vada pav chutney as required 1 cup salted boondi Chives, halved for garnish Method Heat oil in a deep non-stick pan, add mustard seeds and curry leaves. Once the mustard seeds splutter, add ginger-garlic-green chilli-coriander leaves paste. Saute on medium heat till oil separates. Add turmeric powder and mix well. Add sweet potatoes and mix well. Add salt and sauté for a minute. Switch off heat. Place 2 baguette slices on a worktop. Spread some green chutney over them. Sprinkle vada pav chutney on top. Spread some cooked mixture in a dome shape on top. Take boondis in a bowl and roll the prepared bread slices, upside down, in it till well coated with boondi. Make more deconstructed vada pavs in the same way. Transfer deconstructed vada pavs on a serving platter.
