Chinese food is an integral part of the Indian culinary scene. In Indian Chinese cuisine the food is modified to suit Indian palate. In this Chinese seasoning and cooking techniques are adapted to Indian tastes and contain larger offering of vegetarian dishes. Today, it is not only enjoyed by the Indians but is also highly appreciated in in Malaysia, Singapore and North America.  
Foods tend to be flavoured with Indian spices such as cumin seeds, coriander seeds, and turmeric, which are traditionally not associated with authentic Chinese cuisine. Hot chilli, ginger, garlic, sesame seeds, dry red chillies, black pepper corns and yogurt are also frequently used in Indo Chinese dishes. This makes Indian Chinese food similar in taste to many dishes of Singapore and Malaysia, which have strong Chinese and Indian cultural influences.
Non-staple dishes are generally served with generous helpings of gravy, although they are also available without gravy. Culinary styles often seen in Indian Chinese fare include chilli where the food is hot and batter-fried; Manchurian which consists of a sweet and salty brown sauce; and Szechwan sauce which is a spicy red sauce. These are generally not used in authentic Chinese food preparation.

Ingredients for Drums of Heaven in Chilli Plum Sauce Recipe

  • Chicken lollipops 10

  • Soy sauce 1 teaspoon

  • Garlic paste 1 tablespoon

  • Refined flour (maida) 3 teaspoons

  • Red chilli paste 1 tablespoon

  • Egg 1

  • Salt to taste

  • Sweet chilli sauce 1 tablespoon

  • Vinegar 2 teaspoons

  • Oil to deep fry

  • Plum sauce

  • Plums , seeded and coarsely pureed 8-10

  • Oil 2 tablespoons

  • Onion , finely chopped 1 medium

  • Garlic , chopped 1 tablespoon

  • Salt to taste

  • Red chilli paste 1 teaspoon

  • Sugar 1 cup

  • Vinegar 1 teaspoon

Method

Step 1

Put soy sauce, garlic paste, refined flour, red chilli paste, egg and salt in a large bowl and mix well. Add 1 tsp water and mix well. Add sweet chilli sauce and vinegar and mix. Add chicken lollipops and mix well. Keep them in the refrigerator for about 1 hour to marinate.

Step 2

Heat sufficient oil in a deep pan.

Step 3

To make plum sauce, heat 2 tbsps oil in a non-stick pan, add onion and garlic, mix and saute till they soften. Add plum puree and mix. Add salt and red chilli paste and mix well and cook on medium heat.

Step 4

Slide the marinated lollipops into hot oil and deep-fry till cooked and crisp.

Step 5

Add sugar to the sauce and mix till all the sugar dissolves.

Step 6

Drain the lollipops on absorbent paper.

Step 7

Add vinegar to the sauce and mix well. Switch off the heat and transfer the sauce into a small bowl.

Step 8

Arrange the lollipops on a serving plate and serve hot with the plum sauce.
