Ingredients list for Egg Fried Rice - SK Khazana

  • 2 Eggs
  • 3 cups Basmati rice cooked
  • 1 1/2 tablespoons Oil
  • to taste Salt
  • to taste Black peppercorns crushed
  • 2 Spring onion bulbs sliced
  • 1 teaspoon Light soy sauce
  • 2 stalks + to garnish Spring onion greens chopped

Method

  1. Heat ½ tbsp oil in a non-stick pan and break eggs into the pan. Add salt and crushed black peppercorns, cook stirring till the eggs are scrambled. Transfer into a bowl.
  2. Heat remaining oil in the same pan. Add spring onion bulbs and sauté for a minute. Add rice and mix well.
  3. Add light soy sauce, salt and crushed black peppercorns, mix well and cook till rice is heated through.
  4. Add the scrambled eggs and spring onion greens, mix well and cook on high heat for a minute. Take the pan off the heat.
  5. Transfer into a serving dish, garnish with spring onion greens and serve hot.
