You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Egg Fried Rice - SK Khazana Recipe

  • Eggs 2

  • Basmati rice cooked 3 cups

  • Oil 1 1/2 tablespoons

  • Salt to taste

  • Black peppercorns crushed to taste

  • Spring onion bulbs sliced 2

  • Light soy sauce 1 teaspoon

  • Spring onion greens chopped 2 stalks + to garnish

Method

Step 1

Heat ½ tbsp oil in a non-stick pan and break eggs into the pan. Add salt and crushed black peppercorns, cook stirring till the eggs are scrambled. Transfer into a bowl.

Step 2

Heat remaining oil in the same pan. Add spring onion bulbs and sauté for a minute. Add rice and mix well.

Step 3

Add light soy sauce, salt and crushed black peppercorns, mix well and cook till rice is heated through.

Step 4

Add the scrambled eggs and spring onion greens, mix well and cook on high heat for a minute. Take the pan off the heat.

Step 5

Transfer into a serving dish, garnish with spring onion greens and serve hot.
