Frittata is an egg-based Italian dish similar to an omelette or crustless quiche or scrambled eggs, enriched with additional ingredients such as meats, cheeses or vegetables. Cook spaghetti in three cups of salted boiling water till al dente. Drain, refresh in cold water and drain again. Apply one tablespoon of oil to prevent it from sticking together. Heat one tablespoon of olive oil in a pan and cook onion and capsicum for two to three minutes or until very soft. Add spaghetti and tomato. Toss lightly to mix. Add salt and toss again. In a large bowl beat the eggs with a fork. Add milk, salt and crushed peppercorns and mix well. Transfer the spaghetti into a baking dish. Pour the egg mixture on top. Arrange the cheese slices on top and bake, uncovered, for twenty to twenty five minutes at 190 C. Serve hot.
