By Sanjeev Kapoor 18 Mar 2021 in Recipes Course New Update Main Ingredients Eggs, Oil Cuisine Indian Course Main Course Egg Prep Time 16-20 minutes Cook time 26-30 minutes Serve 4 Taste Mild Level of Cooking Easy Others Non Veg Ingredients list for Green Masala Egg Curry 4 Eggs 2-3 tablespoons Oil 1 teaspoon Cumin seeds 1 cup Boiled onion paste 1/4 teaspoon Turmeric powder 1 teaspoon Coriander powder to taste Salt 1/2 teaspoon Garam masala powder to garnish Fresh coriander sprig Green masala 1 medium bunch Fresh coriander leaves 1 medium bunch Fresh mint leaves 1 inch Ginger 4-5 cloves Garlic 2 Green chillies 1 tablespoon Lemon juice Method Boil eggs, cool and peel. To make green masala, put coriander leaves, mint leaves, ginger, garlic, green chillies, lemon juice and some water into a blender jar and blend into a fine mixture. Heat oil in a non-stick pan, add cumin seeds and sauté till their colour changes. Add onion paste, mix and sauté for 2-3 minutes or till light golden. Add turmeric powder and coriander powder, mix and saute for a minute. Add the green masala and mix well. Add salt and ½ cup water, mix and simmer for a minute. Make some slits in the eggs and add to the gravy and mix lightly. Add garam masala powder, mix and simmer for 1-2 minutes.
