Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Gur Papdi - SK Khazana Recipe

  • Jaggery (gur) chopped 1/2 cup

  • Ghee 1/2 cup

  • Whole wheat flour 1 1/2 cups

  • Nutmeg powder 1 pinches

  • Green cardamom powder 1/4 teaspoon

  • Almonds slivered 8-10

  • Pistachios slivered 8-10

Method

Step 1

Heat ghee in a non-stick pan, add whole wheat flour and sauté, stirring continuously, for 8-10 minutes or till it is golden brown in colour.

Step 2

Take the pan off the heat, add nutmeg powder, green cardamom powder and jaggery and mix well.

Step 3

Grease an aluminium burfi tray, put the mixture into it and spread evenly. Sprinkle slivered almonds and pistachios all over the surface and set aside to cool.

Step 4

Cut into squares, arrange on serving platter and serve.
