Treasure house of vitamins and minerals, spinach must be included in the week's menu. The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Hearty Greens with Garlic Recipe

  • Fresh spinach leaves (palak) 20-25

  • Broccoli florets 10-12

  • Pak choy 1 head

  • Garlic 15-18 cloves

  • Oil 2 tablespoons

  • Salt to taste

  • Crushed black peppercorns to taste

  • Cornflour , mixed with 1/4 cup water 1 teaspoon


Step 1

Slice 8-10 garlic cloves.

Step 2

Heat oil in a non-stick wok, add garlic slices and sauté. Roughly chop spinach and add to the wok. Add broccoli. Separate the pokchoy leaves, wash them clean and add to the pan, mix and sauté.

Step 3

Add ½ cup water, mix and cook. Add salt and mix.

Step 4

If you wish you can add a little crushed black peppercorns. Add 2-3 tsps cornflour water, mix and cook for 1-2 minutes.

Step 5

Slice the remaining garlic cloves and add and mix.

Step 6

Transfer into a serving dish and serve hot.
