Instant Noodle Cheese Dosa

  • as required Instant noodles cooked
  • as required Dosa batter
  • 8 tablespo to cook Butter
  • 8 tablespoons Refined flour
  • 4 cups Milk
  • as required Processed cheese grated
  • to taste Salt
  • to taste Black peppercorns crushed
  • as required Schezwan sauce
  • as required Onions chopped
  • as required Tomatoes chopped
  • as required Green capsicums chopped
  • as required Coconut chutney
  • to serve Sambhar

Method

  1. Heat butter in a deep non-stick pan, add refined flour and saute for 1-2 minutes taking care that the colour does not change.
  2. Add milk and whisk so that there are no lumps. Cook for 2 minutes. Add 2 cups grated processed cheese and whisk till it melts. Add salt and crushed black peppercorns and mix well.
  3. Heat a non-stick dosa tawa and brush it with some oil.
  4. For each dosa, pour a ladle full of batter and spread it into a round dosa. Add 2 tablespoons butter and spread it all over the dosa.
  5. Add 2 tablespoons Schezwan sauce and spread it all over the dosa. Sprinkle some onions, tomatoes and green capsicums, mash it slightly with a masher and spread it all over the dosa.
  6. Add 1 tablespoon coconut chutney and continue to mash the toppings.
  7. Add 2-3 tablespoons instant noodles, pour some cheese sauce over it and sprinkle some processed.
  8. Cut the dosa into 4 strips and roll them. Keep them on a serving plate and pour some more cheese sauce over them. Garnish with coriander leaves and serve hot with sambhar and coconut chutney.
