Instant Noodle Cheese Dosa

Ingredients 

Cheese Sauce 

  • 2 tablespoons butter, cut in cubes
  • 2 tablespoons refined flour
  • ¾ cup milk 
  • ½ cup processed cheese, grated 
  • Salt to taste
  • 1 teaspoon crushed black pepper
    Dosa
  • Oil for brushing 
  • 2 cups ready dosa batter
  • 2 tablespoons butter
  • 2 tablespoons schezwan chutney 
  • 1 medium onion, finely chopped
  • 1 medium tomato, finely chopped
  • 1 medium capsicum, finely chopped
  • 1 tablespoon coconut chutney
  • 2 packets instant noodles, prepared
  • 1 cube cheese 
  • Cheese sauce for garnish 
  • Chopped coriander leaves for garnish
  • Sambhar for serving
  • Coconut chutney for serving

Method

  1. To make the cheese sauce, heat butter in a non-stick sauce pan till melts. Add refined flour and whisk. 
  2. Add half milk and whisk again, removing the lumps. Once the mixture is lump free add the remaining milk and whisk. 
  3. Add cheese and whisk till it melts. Add ¼ cup milk and whisk. Add salt and pepper, whisk well. 
  4. Brush a non-stick tawa with oil and heat it. Pour the ready dosa batter and cook. Add butter to the dosa and spread.
  5. Add schezwan chutney and spread. Add onions, tomatoes and capsicum, mash it using a potato masher on the dosa. 
  6. Add coconut chutney and mash. 
  7. Add noodles and cheese sauce, spread it on the dosa. Cook for 4-5 minutes. Grate cheese on top. Cut the dosa into strips and roll into cylinders. 
  8. Transfer to a serving plate, garnish with cheese sauce and chopped coriander leaves. 
  9. Serve hot with sambhar and coconut chutney.
