Instant Panjeeri Popular Punjabi sweet made with arrowroot biscuits instead of whole wheat flour This recipe is from FoodFood TV channel By Sanjeev Kapoor 21 May 2022 in Recipes Course New Update Main Ingredients Arrowroot biscuits, Powdered sugar Cuisine Punjabi Course Mithais Prep Time 11-15 minutes Cook time 11-15 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Veg Ingredients list for Instant Panjeeri 4 cups Arrowroot biscuits , crushed 1/2 cup Powdered sugar 4-5 tablespoons Ghee 1 tablespoon Edible gum 8-10 Almonds , slivered 8-10 Raisins 8-10 Pistachios , slivered 1 pinch Salt Method Blend the biscuits to a coarse powder and transfer into a bowl. Blend sugar to a fine powder and transfer into another bowl. Heat ghee in a deep non-stick pan, add gond and fry till puffed and crisp. Drain into a third bowl. Add almonds and raisins to the same pan. When raisins become puff up, add pistachios and biscuit powder and mix well. Add fried gond and mix well and switch off heat. Crush the gond. Transfer into a bowl and lightly crush the mixture. Add powdered sugar. Again crush the mixture. Add a pinch of salt and mix well.
