Kaleji Fry

Ingredients 

  • 200 grams chicken liver (kaleji)
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 2 medium onions chopped
  • 2 green chillies chopped
  • 1 tablespoon ginger-garlic paste
  • 2 medium tomatoes chopped
  • Salt to taste
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala powder
  • 2 tablespoons fresh coriander leaves chopped
  • Pavs to serve 
  • Ginger cut into thin strips to serve 
  • Fresh coriander sprigs to garnish 

Method

  1. Heat oil in a non-stick pan, add cumin seeds and sauté till their colour changes. Add onions, green chillies and ginger-garlic paste, mix well and saute till onions turn a light brown. Add tomatoes and salt, mix well and saute on medium heat till tomatoes turn pulpy.
  2. Add turmeric powder, red chilli powder and coriander powder and mix well. Add garam masala powder and mix. Add ¼ cup water, mix well and saute on medium heat till oil separates.
  3. Add chicken liver and coriander leaves and mix well. Cover and cook on medium heat for 15-20 minutes.
  4. Transfer kaleji fry onto a serving plate, garnish with ginger strips and coriander sprig. Serve hot with pavs.
