Khowsuey

A traditional Burmese dish – it has a basic gravy that can be vegetarian or non- vegetarian served with noodles and a variety of garnishes This is a Sanjeev Kapoor exclusive recipe.

Khowsuey

Ingredients 

  • 2 tablespoons sliced babycorns 
  • 2 tablespoons chopped green zucchini 
  • 2 tablespoons broccoli florets
  • 2 tablespoons chopped carrot 
  • 2 tablespoons gram flour (besan)
  • 1 cup coconut milk
  • 1 teaspoon green chilli paste
  • Salt to taste
  • Boiled noodles to serve 
  • Chopped spring onion greens for garnish 
  • Chopped spring onion bulbsfor garnish 
  • Fried onions for garnish
  • Fried noodles for garnish
  • Roasted peanuts for garnish
  • Fried garlic for garnish
  • Red chilli flakes for garnish
  • Black pepper powder for garnish
  • Lemon juice to drizzle

Method

  1. Heat a deep non-stick pan, add gram flour and roast it on medium heat, stirring continuously, till raw smell disappears and the colour changes to light brown.
  2. Switch off heat and transfer the gram flour into a blender jar. Add coconut milk, a little water, green chilli paste and salt and blend to a fine mixture.
  3. Heat another deep non-stick pan, add blended mixture and ½ cup water and mix well. . Let it come to a boil on low heat, stirring occasionally.
  4. Add sliced baby corns, green zucchini, broccoli and carrot,mix well and let it cook for 4-5 minutes.
  5. Put some of this gravy into each serving bowl, add some noodles, spring onion greens and bulbs, fried sliced onion, , some fried noodles, peanuts, fried garlic slices, red chilli flakes, black pepper powder and some lemon juice and serve hot.
