History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Kurmura Energy Bar Recipe

  • Puffed rice (kurmura) 3 cups

  • Jaggery , chopped 3/4 cup

  • Ghee 2 tbsps + for greasing

  • Creamy peanut butter 1/4 cup

  • Mixed fruit jam 1 tablespoon

  • Peanuts , roasted and crushed 1/4 cup

  • Dark chocolate , melted 1 cup

  • Salt to sprinkle

  • Walnuts to garnish

  • Peanuts , roasted and peeled to garnish

  • Split Bengal gram , roasted to garnish

  • Fresh coriander sprigs to garnish

Method

Step 1

Heat a non-stick wok, add jaggery, ghee and peanut butter and cook on medium heat till jaggery melts.

Step 2

Add jam and mix well. Add puffed rice and crushed peanuts and mix well.

Step 3

Grease an aluminum tray with ghee. Transfer the mixture onto the tray and spread it evenly, roll a rolling pin over it to level the top and set aside until it sets.

Step 4

Demould and cut into thick sticks and then cut each stick into half.

Step 5

Dip half the bar pieces in melted dark chocolate and place it on a wire rack, sprinkle some salt on it.

Step 6

Garnish the rest with walnuts, peanuts, roasted Bengal gram and coriander sprigs.

Step 7

Arrange the sticks on a serving plate and serve.
