History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Lasun Chutney Recipe

  • Garlic (lasun) cloves 1/2 cup

  • Dried red chillies 14-15

  • Salt to taste

  • Yogurt 1/2 cup

  • Ghee 3 tablespoons

  • Cumin seeds 1/2 teaspoon

  • Fresh coriander sprigs to garnish


Step 1

Remove the stems of the chillies and put them into a blender jar. Add garlic, salt, ¼ cup yogurt and blend to a fine paste.

Step 2

For tempering, heat ghee in a non-stick pan and add cumin seeds, and when their colour changes, add the blended paste and the remaining curd. Mix well and saute, on medium heat, for 4-5 minutes till ghee separates. Rinse the blender jar with ¼ cup water and add to the pan and mix well. Cook for 3-4 minutes or till the water is reduced.

Step 3

Transfer the chutney in a serving bowl, garnish with coriander sprigs and serve.
