Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Lemon and Pumpkin Rice Recipe

  • Lemon Juice soaked for an hour 1 1/2 cups

  • Basmati Rice 2 teaspoons

  • Lemon 1

  • Red pumpkin peeled 250 grams

  • Salt to taste

  • Ghee 2 tablespoons

  • Onion 1 medium

  • Cumin seeds 1 teaspoon

  • Mustard seeds 1 teaspoon

  • Green chillies 2-3

  • Coconut milk 1 cup

Method

Step 1

Heat ghee in a non-stick pan. Slice onion.

Step 2

Add cumin seeds and mustard seeds to the pan and let them splutter. Add onion and sauté till translucent.

Step 3

Cut pumpkin into 1 inch cubes and add to the pan. Add salt and mix well. Cover and cook for 4-5 minutes.

Step 4

Slit green chillies without cutting through and add to the pan. Cover and cook on high heat till the pumpkin changes colour. Add coconut milk and 2 cups water and mix well.

Step 5

Add drained basmati rice and bring it to a boil. Cut the lemon half into 4 pieces and add to the pan. Add lemon juice and mix well. Cover and cook till the rice is done.

Step 6

Transfer onto a serving plate and serve hot.
