Yes, though other meats being more common, biryani eaters all over the world can easily swear by mutton. And not just biryanis, curries, bakes and all other preparations with this wonderful meat are always special. Did you know, unlike other dishes, a day-old mutton prep will always be all the more tastier on the palate! Try it the next time you plan on to take on this meat.

Ingredients for MUTTON SAAG WALA - skk Recipe

  • Mutton cut into 2 inch pieces on the bone and cooked 750 grams

  • Spinach blanched and pureed 2 medium bunches

  • Mustard oil 3 tablespoons

  • Cumin seeds 1 teaspoon

  • Green cardamoms 3-4

  • Cinnamon 2 inches

  • Black peppercorns 8-10

  • Cloves 5-6

  • Large onion finely chopped 1

  • Ginger-garlic paste 1 1/2 tablespoons

  • Green chilli paste 1 teaspoon

  • Large tomato chopped 1

  • Turmeric powder 1/2 teaspoon

  • Coriander powder 1 tablespoon

  • Cumin powder 1 teaspoon

  • Red chilli powder 1/2 teaspoon

  • Salt to taste

  • Mutton stock 2 1/2 cups

  • Tata Sampann Garam Masala 1 teaspoon

  • Butter 1 tablespoon

  • Fresh cream 2 teaspoon to garnish

  • Lemon 1/2

  • Ginger strips to garnish

  • Small onion quartered 1

  • Lemon wedges to serve

  • Green chilli to serve

Method

Step 1

Heat mustard oil in a non-stick deep pan till it begins to smoke. Reduce heat, add cumin seeds and let them change colour.

Step 2

Add green cardamoms, break and add cinnamon stick, black peppercorns and cloves, mix and sauté till fragrant.

Step 3

Add onion, mix and sauté till golden brown. Add ginger-garlic paste and green chilli paste, mix and saute till raw smells disappear.

Step 4

Add tomato, mix and sauté till tomato becomes pulpy. Add turmeric powder, coriander powder, cumin powder, red chilli powder and salt, mix and saute for 1 minute.

Step 5

Add ½ cup water, mix well and cook for 2-3 minutes. Add mutton and mix well.

Step 6

Add spinach puree and mix well. Add mutton stock, mix well and cook for 8-10 minutes.

Step 7

Add Tata Sampann Garam Masala Powder and mix well. Add butter and fresh cream and mix well. Cook for 2-3 minutes.

Step 8

Squeeze the juice of ½ lemon and mix well. Take it off the heat and transfer to a serving bowl.

Step 9

Drizzle some fresh cream, garnish with ginger strips and serve hot with lemon wedges and onion and green chilli.
