Ingredients 

  • 1 cup rice flour
  • ½ cup refined flour (maida)
  • ¼ cup semolina (rawa/suji)
  • 2 medium onion peeled
  • 2 green chillies
  • 6-7 curry leaves 
  • A handful of coriander leaves 
  • Salt to taste 
  • 2 tablespoons white sesame seeds
  • 2 tablespoons roasted peanuts
  • 2 inch piece ginger finely chopped
  • ¼ cup oil + for deep frying
  • Coconut chutney to serve
  • Coffee to serve

Method

  1. Heat sufficient oil in a kadai.
  2. Finely slice onions and finely chop green chillies. Finely chop curry leaves and coriander leaves and transfer all of these into a large bowl.
  3. Add salt and mix well with your hand. Add rice flour, refined flour, semolina, white sesame seeds, peanuts and ginger and mix well. Add coriander leaves and mix well. Add ¼ cup oil and mix till it forms a dough.
  4. Take a portion of the mixture and shape it into a ball. Place it between two plastic sheets and press to form a thin disc. Gently remove and keep on a plate Make more vade similarly.Slide them into hot oil, a few at a time, and deep fry on low heat till golden brown and crisp. Drain on absorbent paper.
  5. Transfer them onto a serving plate and serve hot with coconut chutney and a cup of hot coffee.
