Ingredients list for Malai Kabab

  • 1 cup Fresh cream
  • 4 Boneless chicken legs, cut into small pieces
  • for greasing Oil
  • to taste Salt
  • 1 teaspoon Garlic paste
  • 1 teaspoon Ginger paste
  • a pinch Nutmeg powder
  • ¼ teaspoon Black pepper powder
  • Juice of 1 lemon
  • 1 cup Processed cheese grated
  • ½ tablespoon Cornflour/ corn starch
  • a pinch Green cardamom powder
  • for garnishing Silver warq

Method

  1. Preheat the oven at 180° C. Grease a baking tray with oil.
  2. Place chicken pieces in a bowl, add salt, garlic paste, ginger paste, nutmeg powder, black pepper powder and lemon juice. Mix well and set aside for 20 minutes.
  3. Mash the cheese in a parat, add cornflour and mix well. Add cardamom powder, chicken pieces and mix well.
  4. Add cream and mix gently. Transfer into a bowl and set aside to marinate for ½ hour.
  5. String the chicken pieces onto skewers and place them on a baking tray, apply the remaining marinade on them and place the tray in the preheated oven. Cook, turning sides, for about 16-18 minutes or till evenly done.
  6. Transfer the chicken onto a serving dish, decorate with silver warq and serve.
