Apply sea salt all over the top and inside. Take apricot jam in a bowl and add mustard paste and mix well. Add in orange juice. Prick the chicken all over with the cloves for flavour. Preheat the oven to 230° C. Baste the chicken from all sides with the apricot glaze and sprinkle crushed pepper. Roast in the convection oven at 230° C. for ten to fifteen minutes and then at moderate temperature of 180° C for thirty minutes. Serve hot.
