Ingredients list for Mutton Pepper Roast Kerala Style

  • 750 grams Mutton cut into 2 inch pieces on the bone
  • 2 teaspoons Black peppercorns crushed
  • to taste Salt
  • 2 teaspoons Red chilli powder
  • 1/2 teaspoon Turmeric powder
  • 1 tablespoon Coriander powder
  • 1 1/2 teaspoons Cumin powder
  • 1 tablespoon Lemon juice
  • 3 tablespoons Coconut oil
  • 1 tablespoon Garlic chopped
  • 1 inches Ginger cut into thin strips
  • 2 Medium onions finely chopped
  • 8-10 Curry leaves
  • 10-12 + to garnish Fresh coconut slices
  • to garnish Fried curry leaves

Method

  1. Take mutton pieces in a bowl, add salt, 1 tsp crushed peppercorns, red chilli powder, turmeric powder, coriander powder, cumin powder and lemon juice, mix well and set aside to marinate for 25-30 minutes.
  2. Heat coconut oil in a deep non-stick pan, add garlic, ginger strips and onions, mix well and sauté till onions turn translucent.
  3. Add curry leaves and marinated mutton pieces, mix well and sauté on high heat for 5-6 minutes.
  4. Add coconut slices, salt and remaining crushed peppercorns and mix well. Add 2 cups water and mix well. Cover and cook on medium heat for 35-40 minutes or till the mutton is done.
  5. Transfer the mutton into a serving bowl, garnish with coconut slices and curry leaves and serve hot with malabari parottas.
