History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Oats Jaggery Modak Recipe

  • Oats powder 1 1/2 cups

  • Jaggery powder 1 cup

  • Ghee 2-3 tablespoons

  • Green cardamom powder 1 teaspoon

  • Almonds , finely chopped 2 tablespoons

  • Cashewnuts , finely chopped 2 tablespoons

  • Desiccated coconut 1/4 cup

  • Milk 3-4 tablespoons

Method

Step 1

Heat ghee in a non-stick pan, add oats powder, and sauté on low heat, stirring continuously, for 3-4 minutes.

Step 2

Add jaggery powder, green cardamom powder, nuts and desiccated coconut, mix well, and sauté on low heat, stirring continuously, for 1-2 minutes.

Step 3

Transfer the mixture into a bowl. Add milk gradually and mix till the mixture gets well combined together. Let it cool slightly.

Step 4

Transfer a generous portion of mixture into a modak and make a modak. Demould and place on a serving platter. Make more modaks with the remaining mixture and place on the same platter.

Step 5

Serve.
