Ingredients list for Olive and Pepper Foccacia - SK Khazana

  • 6-8 Black olives sliced
  • 1/2 medium Red capsicum thickly sliced
  • 1/2 medium Yellow capsicum thickly sliced
  • to taste Crushed black peppercorns
  • 1 1/2 tablespoons Fresh yeast
  • 1 teaspoon Castor sugar (caster sugar)
  • 2 1/2 cups Refined flour (maida)
  • 1 1/2 teaspoons Salt
  • 1/2 Semolina (suji)
  • Olive oil 6 tablespoons + to grease + to brush
  • Fresh rosemary few springs
  • 1 teaspoon Sea salt

Method

  1. Take yeast in a small bowl, add castor sugar and 2 tbsps warm water and mix well. Set aside to activate the yeast.
  2. Sieve flour into a large bowl, add salt and semolina and mix well. Make a well in the center and add the yeast mixture and sufficient water, mix and knead into a soft dough.
  3. Drizzle 3 tbsps oil and knead till the oil is well incorporated.
  4. Dip a few rosemary sprig in oil and grease a baking pan, keep the dough in it and press lightly to spread it evenly to cover the entire base. . Cover with a moist muslin cloth and set aside to prove for 20-25 minutes.
  5. Preheat the oven at 180˚C.
  6. Make holes on the surface of the dough with your finger and drizzle remaining oil into the holes. Sprinkle red capsicum, yellow capsicum, olive slices and crushed black peppercorns all over the top. Separate the leaves of a rosemary sprig and sprinkle on top. Sprinkle sea salt on top and press gently.
  7. Keep the baking pan in the preheated oven and bake for 15-20 minutes.
  8. Remove from the oven and brush with olive oil. Serve as required.
