Ingredients list for Paella With Tofu

  • 1 1/2 cups Paella rice (or short grained rice) soaked
  • 150 grams Tofu ½ inch cubes
  • 3 tablespoons Olive oil
  • 1 medium Onion sliced
  • 2 medium Tomatoes ½ inch pieces
  • 2 teaspoons Red chilli powder
  • 1/4 teaspoon Turmeric (haldi) powder
  • Saffron (kesar) few strands
  • 3 1/2 cups Vegetable stock
  • to taste Salt
  • 1/4 cup Green peas blanced
  • 1 medium Red capsicum (lal shimla mirch) seeded, ½ inch pieces
  • 1 medium Green capsicum (hari shimla mirch) seeded, ½ inch pieces
  • 2 tablespoons Fresh coriander leaves (hara dhania) chopped
  • 2 Lemons cut into wedges

Method

  1. Drain the soaked rice and set aside.
  2. Heat two tablespoons olive oil in a deep pan. Add onion and sauté till translucent. Add tomatoes and sauté for two minutes.
  3. Add red chilli powder, turmeric powder and saffron and mix. Add vegetable stock, salt and rice and mix again. Cook till rice is half done.
  4. Meanwhile heat the remaining olive oil in another pan and add green peas, red capsicum, green capsicum and tofu and toss till they are lightly browned and crunchy.
  5. Add these to the rice and cook till the rice is completely done.
  6. Serve hot garnished with coriander leaves and lemon wedges.
