Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Paneer Kathi Roll - SK Khazana Recipe

  • Cottage cheese (paneer) cut into strips 400 grams

  • Whole wheat rotis 4

  • Onion rings 20-24

  • Green chilli chopped 1

  • Vinegar 1 tablespoon

  • Oil 2 tablespoons

  • Medium onion sliced 1

  • Medium tomato seeded and sliced 1

  • Ginger-garlic paste 1 teaspoon

  • Red chilli powder 1 teaspoon

  • Turmeric powder 1/2 teaspoon

  • Garam masala powder 1/2 teaspoon

  • Thick yogurt 2 tablespoons

  • Mayonnaise as required

  • Green chutney as required

  • Chaat masala to sprinkle

Method

Step 1

Take onion rings in a bowl, add green chillies and vinegar and set aside.

Step 2

Heat oil in a non-stick pan, add sliced onions and sauté till golden brown. Add tomatoes and cook till the tomatoes are soft.

Step 3

Add ginger-garlic paste, red chilli powder, turmeric powder and cottage cheese strips and sauté. Add garam masala powder and yogurt. Mix well and cook for 2-3 minutes.

Step 4

Place each roti on work top, spread some mayonnaise and green chutney over it.

Step 5

Keep a portion of the cottage cheese mixture in the centre and top up with some onion-chilli mixture. Sprinkle chaat masala and roll tightly.

Step 6

Cut each roll into 2 equal pieces, wrap in colourful tissue napkin and arrange on serving platter. Serve immediately.
