Ingredients 

  • 1 French Loaf
  • 2-3 medium Tomatoes finely chopped
  • 1 tablespoon Oil
  • 1 medium Onion finely chopped
  • 1 1/2 teaspoons Ginger-garlic paste
  • 1/2 teaspoon Red chilli powder
  • 1 medium Green capsicum
  • Salt to taste
  • 3 medium Potatoes boiled, peeled and mashed
  • 1 1/2 tablespoons Pav bhaji masala
  • 50 grams Mozzarella cheese
  • for garnishing Fresh parsley sprigs

Method

  1. Preheat oven at 220ºC.
  2. Heat oil in a non-stick pan. Add onion and sauté till lightly browned.
  3. Cut French loaf into slices.
  4. Add ginger-garlic paste to the pan, mix and sauté well. Add red chilli powder, mix and saute.
  5. Add tomatoes, mix well, cover and cook till the tomatoes turn soft.
  6. Deseed and finely chop capsicum.
  7. Add salt to the pan, mix well, cover and cook till the oil separates.
  8. Add potatoes and mix well. Add pav bhaji masala, mix well and sauté. Add little water, mix, cover and cook on high heat for 3-4 minutes.
  9. Place bread slices on an ovenproof plate.
  10. Add chopped capsicum to the pan, mix and cook till capsicum turns soft.
  11. Grate cheese into a bowl.
  12. Spread cooked bhaji on each bread slice, top with grated cheese, put the plate in the preheated oven and bake till the cheese melts and bread turns crisp.
  13. Serve hot garnished with parsley sprigs.
