Penne Arrabiata

Boiled penne pasta tossed in tangy arrabiata sauce. Tomato based sauce made with onions, garlic and basil. This is a Sanjeev Kapoor exclusive recipe.

Penne Arrabiata

Ingredients 

  • 2 cups penne pasta , boiled
  • 1 tablespoon olive oil
  • 2 tablespoons chopped garlic 
  • 1 medium onion , finely chopped
  • 1 1/2 cups tomato concasse
  • Salt to taste
  • Crushed black peppercorns to taste
  • 1 teaspoon red chilli flakes
  • A pinch of castor sugar
  • 3-4 basil leaves
  • 4-5 black olives , pitted and sliced
  • 10 grams parmesan cheese
  • Fresh basil sprig to garnish
  • Garlic bread slices to serve

Method

  1. Heat olive oil in a non-stick pan, add garlic and onion, mix and sauté till onion turns a light brown and raw smells disappear.
  2. Add tomato concasse, mix and sautefor 1 minute. Add salt, mix and saute for 1-2 minutes.
  3. Add pasta, crushed peppercorns and chilli flakes, mix and cook for 1 minute. Add castor sugar and adjust salt, mix and cook for 1-2 minutes. Tear basil leaves and add and mix well.
  4. Transfer thepasta into a serving bowl. Put black olive slices and garnish with parmesan shavings and basil sprig.
  5. Serve hot with garlic bread slices.
