Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Pepper Rawas Tikka Recipe

  • Indian salmon (rawas) fillets 500 grams

  • Black pepper powder 1 1/2 teas as required

  • Salt to taste

  • Lemon juice 2 tablespoons + to drizzle

  • Ginger paste 1 teaspoon

  • Garlic paste 1 teaspoon

  • Carom seeds 1/2 teaspoon

  • Roasted gram flour 2 tablespoons

  • Hung yogurt 1/4 cup + tablespoon

  • Garam masala powder 1 teaspoon

  • Olive oil 1 tablespo for brushing and sprayiong

  • Spring onion bulbs 3

Method

Step 1

Cut the fish into 2 inch cubes and put in a bowl. Add salt, lemon juice, ginger paste, garlic paste, carom seeds and gram flour and mix well. Add ¼ cup hung yogurt and mix well.

Step 2

Add garam masala powder, black pepper powder and mix well. Set aside to marinate for 2 hours.

Step 3

Add 1 tablespoon olive oil and mix well.

Step 4

Heat a Gas Oven Tandoor (GOT) and brush with some olive oil.

Step 5

Spread black pepper powder on a plate. Coat the marinated fish in it, place in the Gas Oven Tandoor (GOT), cover and cook. Once it is half done, uncover, spray some olive oil, cover and cook till fully done. Switch off heat and let the fish remain in the Gas Oven Tandoor (GOT) for a few minutes.

Step 6

To make salad, diagonally slice spring onion bulbs and put into a bowl. Add salt, 1 tablespoon hung yogurt and mix well. Set aside.

Step 7

Prepare a bed of salad on a serving platter, put the fish tikka on it, drizzle lemon juice on top and serve hot.
