Ingredients list for Protein Pulao

  • 1 cup Basmati rice soaked
  • 1 1/2 cup Soya Nuggets
  • 1 cup Black Bengal gram (kala chana)
  • 1 tablespoon Oil
  • 1 teaspoon Cumin seeds
  • 10-12 Black peppercorns
  • 3 medium Onions sliced
  • 3 Green chillies
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Red chilli powder
  • 2 tablespoons Yogurt
  • to taste Salt
  • 1 teaspoon Garam masala powder
  • 10-15 Fresh mint leaves

Method

  1. Slice onions. Heat oil in a deep non stick pan, add cumin seeds, peppercorns and onions and sauté. Slit green chillies and add. When onions turn golden, add soya nuggets.
  2. kala chana, turmeric powder, red chilli powder and yogurt and mix. Sauté for 2-3 minutes. Drain and add rice and mix. Add 1½ cups cooking liquour in which the chane were cooked and mix. Add salt, garam masala powder and mint leaves and cook. When half the moisture is absorbed, cover and cook till rice is done.
  3. Serve hot.
