Ingredients list for Pumpkin and Pineapple Crumble

  • 500 grams Pumpkin peeled, sliced and blanched in cinnamon water
  • 1 cup Pineapple chopped
  • ¼ cup Whole wheat flour (atta) roasted
  • 1 cup Rolled oats roasted
  • a pinch Cinnamon powder
  • 2-3 tablespoons Honey
  • 10-15 Almonds roasted and chopped
  • ½ cup Pumpkin seeds
  • ? cup Chilled butter

Method

  1. Preheat oven to 180° C.
  2. Mix together pumpkin, pineapple, cinnamon powder and honey in a bowl.
  3. Mix together wheat flour, oats, almonds and pumpkin seeds in another bowl. Add butter and mix till the mixture resembles breadcrumbs.
  4. Spread the pumpkin mixture evenly in a casserole and top with the oats mixture. Place the casserole in the preheated oven and bake for 15-20 minutes.
  5. Serve warm.
