Quick Peanut Potatoes Potatoes and peanuts cooked with some simple ingredients make a delicious dish. A very quick sabzi made from boiled potatoes and peanuts. By Sanjeev Kapoor 05 Apr 2021 in Veg Main Course Vegetarian New Update Quick Peanut Potatoes Main Ingredients Medium potatoes, Raw peanuts Cuisine Gujarati Course Main Course Vegetarian Prep Time 21-25 minutes Cook time 11-15 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients 4 medium potatoes, boiled, peeled and cut into cubes ½ cup raw peanuts 2 tbsps ghee 1 tsp white sesame seeds 8-10 curry leaves 1 tsp ginger-green chilli paste Salt to taste A pinch of sugar 2 tbsps freshly chopped coriander leaves Sprig of coriander for garnish Method Heat ghee in a non-stick pan, add white sesame seeds, curry leaves and cook till the seeds have changed colour. Add peanuts and sauté on medium heat for 3-4 minutes. Add ginger-green chilli paste, mix well. Add potatoes, salt and a pinch of sugar, chopped coriander and mix well. Cook for 3-4 minutes.
