Rajgira Fruit Pizza This is a completely healthy pizza made with amaranth seeds used for the base and topped with a medley of fruits . This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 27 Mar 2017 in Recipes Course New Update Main Ingredients Orange, Amaranth Cuisine Fusion Course Snacks and Starters Prep Time 31-40 minutes Cook time 0-5 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Veg Ingredients list for Rajgira Fruit Pizza 1 medium Orange ½ cup Amaranth seeds (Rajgira), popped 1 Kiwi peeled and cut into slices 1 Muskmelon wedge, cut into slices 6-8 Dried Berries 1½ tablespoons Coconut oil ½ cup Jaggery (gur) chopped a pinch Salt ½ teaspoon Green cardamom powder ½ cup Hung yogurt ¼ cup Walnuts toasted and crushed Method Separate orange segments and reserve the zest. Heat coconut oil in a non-stick pan. Add jaggery and salt, mix and cook till the jaggery melts. Add amaranth and mix well. Add cardamom powder and mix well. Divide the mixture immediately into 4 equal portions, spreading into small discs onto a silicon sheet. Set aside for 15-20 minutes. Mix together yogurt and orange zest in a bowl. Spread a spoonful of yogurt mixture over each disc. Arrange kiwi slices, orange segments and melon slices, top with berries and sprinkle walnuts.
