Some say Chinese cuisine is 400,000 years old going back to the Peking Man and his use of fire. Some other accounts of the history of Chinese cuisine takes the beginning to the Chinese stone age. However today Chinese cuisine enjoys the distinction of being the most popular in the world.
All this furore about Chinese food can make one wonder what is so special about this cuisine.  To put it in one word it is wholesome.  It has the characteristics of being nutritious, economical, balanced and delicious. It cannot be gainsaid that Chinese food is popular the world over and it can be adapted into our modern lifestyles as the strong link between diet and health of body, mind and spirit is epitomized in Chinese cookery. We all desire harmony in our lives and this works on the ancient Taoist principle of Yin and Yang in which balance and contrast are the key. Each Chinese dish reflects a balance of taste, texture, aroma and colour. Be it sweet, sour, pungent, hot, salty or spicy – all the six basic flavours are incorporated deftly in all Chinese dishes.

Ingredients for Scallion Bing Recipe

  • Refined flour (maida) , sifted 250 grams for dusting

  • Rice flour , sifted 20 grams

  • Instant dry yeast 3 grams

  • Sugar 1 tablespoon

  • Salt 1 1/2 tsps to sprinkle

  • Sesame oil for applyi tablespoon

  • Spring onion greens , finely chopped 3 cups

  • White sesame seeds to sprinkle

  • Oil to shallow fry

  • Spice mix

  • White pepper powder 2 teaspoons

  • 5-spice powder 2 teaspoons

  • Salt 2 teaspoons

Method

Step 1

Mix together ½ cup warm water, yeast, and sugar in a bowl. Set aside for 5 minutes for the yeast to activate.

Step 2

Take refined flour in a mixing bowl, add rice flour, salt and the activated yeast, mix well and knead into soft dough. Add warm water if needed.

Step 3

Add sesame oil and continue to knead till well combined.

Step 4

Apply some sesame oil on the inside of a large bowl. Place the dough in it, cover with a damp muslin cloth and set aside to prove for 35-40 minutes or till the dough doubles in volume.

Step 5

Gently knead the dough and divide into 2 equal portions. Shape each portion into a ball.

Step 6

Dust with a little refined flour and roll the balls into rectangles. Apply some oil on one rectangle, sprinkle white pepper powder, 5 spice powder, salt and spread a generous portion of spring onion greens on one side of the rectangle. Fold it.

Step 7

Apply some oil over the folded part and place a generous portion of the spring onion greens over one half and fold over the remaining half. Press to seal the edges.

Step 8

Sprinkle some refined flour and roll it out into a square. Similarly shape the other portion of the dough. Cover and allow to prove for 20-25 minutes.

Step 9

Apply some water on the dough squares and sprinkle white sesame seeds.

Step 10

Heat sufficient oil in a pan. Place the dough squares and apply some water on top of it as well and sprinkle white sesame seeds. Cover and cook on low heat for 10-15 minutes. Carefully flip and cook the other side uncovered on low heat for 10-12 minutes.

Step 11

Drain on an absorbent paper and cut into wedges. Serve.
