Sev Khichia Papad

Roast papads over an open flame and break them into pieces. Top with spiced mashed potatoes, veggies, chutneys, yogurt, and garnishes for a burst of flavour in every bite. This is a Sanjeev Kapoor exclusive recipe.

Ingredients

  • 4 khichia papad
  • 2 medium potatoes boiled, and peeled
  • ¼ teaspoon chaat masala + for sprinkling
  • ¼ teaspoon dried mango powder + for sprinkling
  • ¼ teaspoon red chilli powder + for sprinkling
  • Melted butter as required
  • 1 onion finely chopped
  • 1 tomato finely chopped
  • 3-4 tablespoons raw mango, chopped
  • 4-5 tablespoons roasted peanuts
  • 4-5 tablespoons masala chana dal
  • Red chilli garlic chutney as required
  • Sweet tamarind chutney as required
  • Green chutney as required
  • Fresh coriander leaves for garnish
  • Sev for garnish

Method

  1. Dry roast the papads on a direct flame till well done on both sides.
  2. Mash the potatoes into a bowl, add chaat masala powder, dried mango powder, red chilli powder, and mix well.
  3. For each portion place 1 papad on a serving plate, keep another plate on it and press slightly so that the papad is broken into pieces. Drizzle a little butter, sprinkle some onion, tomato, raw mango, peanuts, masala chana dal and potato mixture.
  4. Drizzle some red chilli-garlic chutney, sweet tamarind chutney, green chutney, sprinkle chaat masala powder, red chilli powder and drizzle a little yogurt. Garnish with coriander leaves, sev and chana dal and serve immediately.
