By Sanjeev Kapoor 05 May 2016 in Recipes Veg New Update Main Ingredients Spinach puree, Basmati rice Cuisine Fusion Course Rice Prep Time 11-15 minutes Cook time 11-15 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Spinach Corn Rice 3/4 cup Spinach puree 1/2 cup Basmati rice blanched 3 cups Cooked basmati rice 1 tablespoon Oil 2 medium Onions diced 1 medium Red capsicum 1/4 inch pieces 8-10 cloves Garlic 1/2 cup White sauce to taste Salt 2 tablespoons Sesame seeds (til) toasted Method Place the rice in individual bowls. Heat the oil in a non stick pan. Add the onions and red capsicum and toss till they are well glazed. Transfer into a bowl. Add garlic to the pan and sauté. Add spinach puree and corn and mix. Add white sauce and salt and mix well. Simmer for two minutes. Put a few ladleful of the spinach corn mixture over the rice in each bowl. Top it up with the glazed onions and capsicum. Sprinkle toasted sesame seeds and serve immediately.
