Ingredients list for Spinach Fried Rice

  • 6-8 Fresh spinach leaves
  • 4 tablespoons Spinach puree
  • 3 cups Basmati rice , cooked
  • 1 tablespoon Oil
  • 2 tablespoons Garlic , finely choppped
  • 1 tablespoon White sesame seeds (safed til)
  • 2 Green chillies , finely chopped
  • 1 small Carrot , finely chopped
  • 8-10 French beans , finely chopped
  • 1/4 cup Cabbage , shredded
  • 1 tablespoon Soy sauce
  • 1 tablespoon Vinegar
  • to taste Black peppercorns , crushed
  • to taste Salt
  • 1-2 Spring onions with geens

Method

  1. Heat oil in a non-stick pan, add garlic and sauté till fragrant. Add sesame seeds and green chillies, mix and sauté till the seeds pop. Transfer the mixture into a bowl and set aside.
  2. In the same pan, add carrot, French beans, cabbage, soy sauce, vinegar and crushed peppercorns, mix well and sauté for 1-2 minutes. Add salt and mix. Add basmati rice and toss.
  3. Roughly chop spinach leaves and spring onions. Reserve some spring onion greens for garnishing and add the rest to the pan along with spinach leaves and toss well. Add spinach puree, mix well and let it get heated through.
  4. Transfer into a serving bowl, garnish with reserved spring onion greens and sautéed garlic-sesame-chilli mixture and serve hot.
