You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Steamed Eggs with Dates and Banana Smoothie - SK K Recipe

  • Eggs 8

  • Salt to taste

  • Medium green capsicum seeded and chopped 1

  • Medium red capsicum seeded and chopped 1

  • Medium yellow capsicum seeded and chopped 1

  • Spring onions with greens 2

  • Black peppercorns crushed to taste

  • Seedless dates 1 cup

  • Elaichi bananas 2

  • Sunflower seeds 2 tablespoons

  • Walnuts 8-10

  • Almond milk 2 cups

  • Instant coffee powder 2 teaspoons

  • Butter 1 tablespoon

  • Multigrain bread toasted and cut into triangles 4 slices

  • Chicken sausages 8

  • Cherry tomatoes 14-16

  • Avocado 1

  • Orange segments peeled to serve

  • Green capsicum cut into thin strips to serve

  • Chia seeds soaked 2 teaspoons


Step 1

Heat sufficient water in a steamer.

Step 2

Break the eggs, separate the egg yolks and whites and put them in 2 different bowls. Add salt, green capsicum, red capsicum and yellow capsicum to the egg whites. Chop spring onion and add to the egg mixture. Add crushed peppercorns and salt and whisk the mixture well.

Step 3

Heat sufficient water in a steamer. Transfer into individual silicone moulds, place the moulds in the steamer, cover it and steam for 7-10 minutes.

Step 4

To make the smoothie, put the dates in a blender jar. Add sunflower seeds, walnuts, almond milk and coffee powder.

Step 5

Peel and slice the bananas and add and blend everything to a smooth mixture.

Step 6

Once the egg mixture is cooked, take the steamer off the heat and keep it covered till it is time to serve.

Step 7

Cut the toasted bread slices into triangles and place 2 triangles on each serving plate.

Step 8

Heat butter in a non-stick pan. Add the chicken sausages and cherry tomatoes to the hot butter in the pan and sauté for 2 minutes.

Step 9

Halve the avocado, remove the seed and cut the flesh into wedges.

Step 10

Place 2 avocado wedges, some orange segments, 2 sausages and 2 cherry tomatoes on each serving plate. Upturn the steamed eggs over the toasted bread triangles. Garnish with green capsicum strips.

Step 11

Pour the smoothie into a serving glasses and top up with chia seeds. Serve the smoothie with the steamed eggs.
