  • 8 Eggs
  • to taste Salt
  • 1 Medium green capsicum seeded and chopped
  • 1 Medium red capsicum seeded and chopped
  • 1 Medium yellow capsicum seeded and chopped
  • 2 Spring onions with greens
  • to taste Black peppercorns crushed
  • 1 cup Seedless dates
  • 2 Elaichi bananas
  • 2 tablespoons Sunflower seeds
  • 8-10 Walnuts
  • 2 cups Almond milk
  • 2 teaspoons Instant coffee powder
  • 1 tablespoon Butter
  • 4 slices Multigrain bread toasted and cut into triangles
  • 8 Chicken sausages
  • 14-16 Cherry tomatoes
  • 1 Avocado
  • to serve Orange segments peeled
  • to serve Green capsicum cut into thin strips
  • 2 teaspoons Chia seeds soaked

Method

  1. Heat sufficient water in a steamer.
  2. Break the eggs, separate the egg yolks and whites and put them in 2 different bowls. Add salt, green capsicum, red capsicum and yellow capsicum to the egg whites. Chop spring onion and add to the egg mixture. Add crushed peppercorns and salt and whisk the mixture well.
  3. Heat sufficient water in a steamer. Transfer into individual silicone moulds, place the moulds in the steamer, cover it and steam for 7-10 minutes.
  4. To make the smoothie, put the dates in a blender jar. Add sunflower seeds, walnuts, almond milk and coffee powder.
  5. Peel and slice the bananas and add and blend everything to a smooth mixture.
  6. Once the egg mixture is cooked, take the steamer off the heat and keep it covered till it is time to serve.
  7. Cut the toasted bread slices into triangles and place 2 triangles on each serving plate.
  8. Heat butter in a non-stick pan. Add the chicken sausages and cherry tomatoes to the hot butter in the pan and sauté for 2 minutes.
  9. Halve the avocado, remove the seed and cut the flesh into wedges.
  10. Place 2 avocado wedges, some orange segments, 2 sausages and 2 cherry tomatoes on each serving plate. Upturn the steamed eggs over the toasted bread triangles. Garnish with green capsicum strips.
  11. Pour the smoothie into a serving glasses and top up with chia seeds. Serve the smoothie with the steamed eggs.
