Ingredients list for Stir Fried Chicken - SK Khazana

  • 300 grams Chicken breast
  • 250 grams Broccoli
  • 10-12 Button mushrooms
  • 2 stalks Spring onion greens
  • to taste Salt
  • 1 tablespoon Blended sesame oil
  • 1 tablespoon Garlic chopped
  • 1 1/2 tablespoons Oyster sauce
  • 1 teaspoon Green chilli sauce
  • a few drops Dark soy sauce

Method

  1. Cut broccoli into medium sized florets and set aside. Halve mushrooms. Chop spring onions greens. Cut chicken into ½ inch cubes.
  2. Boil sufficient water in a deep pan, add salt and broccoli and blanch them for 2 minutes. Drain and soak in ice cold water.
  3. Heat oil in a non-stick wok, add garlic, mix and sauté till lightly browned. Add chicken cubes and sauté on high heat for 1-2 minutes.
  4. Add mushrooms, mix. Add salt, mix well and sauté for 4-5 minutes on high heat.
  5. Add oyster sauce, green chilli sauce and dark soy sauce, mix well and sauté for 1 minute. Add broccoli and sauté for 2 minutes. Add ½ the chopped spring onion greens, mix well and sauté for 1 minute. Take the pan off the heat.
  6. Transfer into a serving bowl, garnish with remaining spring onion greens and serve hot.
