Cut eggplants into thick strips and add to the pan. Add salt and sauté till lightly browned. Slice onion and add to the pan and mix well. Add crushed garlic and mix well. Add chicken strips and mix well. Add dark soy sauce, red chilli paste and tomato ketchup and mix well. Add crushed peppercorns and cook till the chicken is done. Add vinegar and mix well. Transfer onto a serving plate, drizzle sesame oil, garnish with green capsicum curls and serve hot.
