Ingredients

Dhokla

  • 2 cups gram flour (besan)
  • ½ teaspoon turmeric powder
  • Salt to taste
  • ½ teaspoon ginger-green chilli paste
  • 1 cup yogurt
  • 1 tablespoon oil
  • 1 teaspoon fruit salt
  • Fresh coriander leaves chopped, for garnish

Tempering

  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 7-8 curry leaves
  • 2 Tandoori masala powder

Method

  1. Take gram flour in a bowl, add turmeric powder, salt, ginger-green chilli paste, yogurt and sufficient water and mix well to make a smooth and semi-thick batter. Add oil and fruit salt and mix well.
  2. Heat sufficient water in a steamer and grease a thali with oil. Pour the batter into the thali and place it in the steamer. Cover and steam for 10-12 minutes. Take the thali out of the steamer and set aside to cool slightly. Cut into even-sized cubes.
  3. Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add 7-8 curry leaves, tandoori masala powder and dhokla cubes. Toss well and cook for 30 seconds.
  4. Transfer the dhokla cubes onto a serving platter, garnish with coriander and serve hot.
