In short Thai dishes can be extremely personal to the cook, how they are refined for particular tastes, how they befit a special function or festival and where they originate. The cuisine has its roots in a waterborne lifestyle, with aquatic animals, plants and herbs as major ingredients.
Thai cuisine is inextricably interwoven with culture, a mystical mix of fragrant flavours and intriguing history:  given the country’s historical Indian roots - Hindu Buddhism was bought here centuries ago, so many Thai curries are redolent with chillies, garlic, cardamom, cloves, cinnamon, and onions.

Ingredients for Thai Style Red Chilli Sauce Recipe

  • Fresh Red Chillies 7-8

  • Garlic 7-8 cloves

  • Salt to taste

  • Sugar 4 teaspoons

  • Vinegar 2 1/2 tablespoons

  • Fish sauce 2 teaspoons

  • Soy sauce 1 teaspoon

Method

Step 1

Crush and roughly chop garlic and red chillies. Put them in a blender jar and blend into a coarse paste.

Step 2

Mix together salt, sugar and 2 tbsps vinegar in a small bowl. Add fish sauce and mix. Add soy sauce and mix well.

Step 3

Add the chilli paste and mix well. Add the remaining vinegar and mix well.

Step 4

Serve with Chao Tom or any other dish.
