Veg Chowmein

Veg Chowmein

Ingredients

  • 2 cups boiled noodles , 
  • 5-6 button mushrooms , quartered
  • 3-4 babycorn , diagonally sliced and blanched
  • 1/4 cup mixed capsicum (red, green and yellow) diamonds
  • 1 medium onion , thickly sliced
  • 1 tablespoon sesame oil (til oil)
  • 4-5 garlic cloves , sliced
  • 1 inch ginger , finely chopped
  • 2-3 spring onion bulbs , sliced
  • Salt to taste
  • 1 teaspoon soy sauce
  • 1 tablespoon red chilli sauce
  • 1 teaspoon vinegar
  • 1 teaspoon toasted sesame seeds (til) ,  to garnish 
  •  Diagonally sliced spring onion greens , for garnish

Method

  1. Heat sesame oil in a non-stick pan, add garlic, ginger and spring onion bulbs, mix and sauté for 1 minute.
  2. Add mushrooms and babycorn, mix and sauté for 1 minute. Add salt and mix. Add mixed capsicums diamonds and onion, mix and sauté for 1 minute.
  3. Add noodles, soy sauce, red chilli sauce and salt, mix and cook for 2 minutes. Add vinegar and 1 teaspoon sesame seeds and mix well.
  4. Transfer onto a serving platter, garnish with spring onion greens and sesame seeds and serve hot.
