Ingredients
- 100 grams glass noodles
- 1/2 medium green papaya, sliced
- 3 tablespoons oil
- 4 garlic cloves, chopped
- 1 celery stalk,sliced
- Salt to taste
- 1/2 medium green capsicum, cut into 1/2 inch pieces
- 1/4 teaspoon white pepper powder
- 2 tablespoons fish sauce
- 1 1/2 teaspoons brown sugar
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh coriander leaves
- 1/2 cups roasted peanuts, crushed
- 1 cup bean sprouts
Method
- Soak the noodles in hot water for a few minutes. Drain and refresh in cold water. Drain and set aside. Heat the oil in a non stick pan.
- Add the garlic and sauté till reddish brown. Add the celery and green papaya. Mix well and sauté. Add salt and capsicum and mix well.
- Add the pepper powder and noodles. Mix well and sauté. Add the fish sauce, brown sugar, lemon juice, coriander leaves and half the peanuts.
- Mix well and cook on medium heat for sometime. Serve the salad, garnished with the bean sprouts and the remaining peanuts.
