Heat a wire rack on direct flame, place the baingan and tomatoes over it and roast on medium heat, rotating the vegetables till well charred from all sides. Place the roasted baingan and tomatoes on the worktop, peel the charred skin, trim the tops and finely chop them along with the roasted garlic cloves. Transfer into a bowl, add onion, green chillies, coriander leave, salt and mustard oil and mix till well combined.
