Butter Mushroom Rice

Ingredients

  • 3 cups cooked Basmati rice
  • 2 tablespoons butter
  • 4 button mushrooms
  • 2 spring onions with greens
  • 1 tablespoon finely chopped garlic
  • 1 tablespoon finely chopped celery 
  • 1-2 fresh red chillies, diagonally sliced
  • 1 tablespoon finely chopped ginger
  • Salt to taste
  • White pepper powder to taste
  • 1 teaspoon green chilli sauce
  • A dash of soy sauce

Method

  1. Diagonally slice spring onion bulbs and finely chop the greens. 
  2. Thinly slice mushrooms. 
  3. Heat butter in a non-stick pan, add garlic and celery, mix well and saute for 1 minute.
  4. Add sliced spring onion bulbs, mix and sauté for 1 minute.
  5. Add red chillies and ginger and mix well.
  6. Add mushrooms, mix and sauté on high heat for 2-3 minutes. 
  7. Add salt, white pepper powder, green chilli sauce and soy sauce, mix well and suate for 1 minute. 
  8. Add Basmati rice and mix till well combined. Add most of the chopped spring onion greens and mix well. 
  9. Transfer the rice into a serving bowl, garnish with remaining spring onion greens and serve hot.
