Corn And Cheese Dip

Ingredients

  • 1 cup boiled sweet corn kernels
  • 1 cup grated mixed cheese + for sprinkling
  • ½ cup grated mozzarella cheese + for sprinkling
  • 1½ tablespoons butter 
  • 1 tablespoon finely chopped garlic
  • 1½ tablespoons refined flour (maida) 
  • 2 cups milk
  • ½ cup chopped spring onion greens + for sprinkling
  • Crushed black peppercorns to taste
  • ½ teaspoon red chilli flakes
  • A pinch of salt
  • Nachos to serve

Method

  1. Preheat oven to 180° C.
  2. Heat butter in a non-stick pan, add garlic, mix and saute till golden brown. Add refined flour, mix well and saute till fragrant. 
  3. Add milk and cook, whisking continuously, for 1-2 minutes.
  4. Add mixed cheese, mozzarella cheese, sweet corn kernels and spring onion greens, mix well and cook for 1-2 minutes.
  5. Add crushed black peppercorns, red chilli flakes and salt, mix well and cook for 1-2 minutes. 
  6. Transfer the mixture into a small oven proof baking dish. Sprinkle mixed cheese, mozzarella cheese and spring onion greens. Place it in the preheated oven and cook for 10-15 minutes or till the cheese melts. 
  7. Serve hot with nachos.
