Ingredients
- 500 grams sponge gourd (gilka), roughly chopped
- Salt to taste
- 6 green chillies
- 18-20 garlic cloves
- 4 tablespoons oil
- 1½ teaspoons cumin seeds
- 6-8 light green chillies, slit
- 3 tablespoons raw peanuts
- 4 tablespoons chopped spring onion greens
- Rice bhakri for serving
Method
- Bring 2-3 cups water to boil in a pan. Add salt and sponge gourd and cook for 10-15 minutes.
- Crush green chillies and garlic coarsely in a large rmortar with pestle. Transfer the cooked sponge gourd and continue to crush.
- For the tempering, heat oil in a pan. Add cumin seeds and once they start to change colour, add green chillies and raw peanuts, mix well and saute for 2 minutes.
- Add spring onion greens and mix well. Add the crushed gourd mixture and mix. Adjust salt and cook for 2 minutes.
- Transfer into a serving bowl and serve hot with rice bhakri.
