Gilkyacha Bharit Gilkya is a type of turai that is smooth. This vegetable is quite underrated because of its bland taste and without much flavour of its own. But when cooked this way it is quite tasty. It is a healthy vegetable and especially good to have during summer. This bhaji is quite popular among the Maharashtrians and is generally served with rice bhakris. By Sanjeev Kapoor 05 Jul 2024 in Recipes Main Course Vegetarian New Update Gilkyacha Bharit Main ingredients Sponge gourd (gilkya), Green chillies, Garlic, Oil, Cumin seeds, Light green chillies, Raw peanuts, Spring onion greens, Cuisine Maharashtrian Course Main course Vegetarian Prep time 10-15 minutes Cook time 20-25 minutes Serve 4 Taste Spicy Level of cooking Easy Others Vegetarian Ingredients 500 grams sponge gourd (gilka), roughly chopped Salt to taste 6 green chillies 18-20 garlic cloves 4 tablespoons oil 1½ teaspoons cumin seeds 6-8 light green chillies, slit 3 tablespoons raw peanuts 4 tablespoons chopped spring onion greens Rice bhakri for serving Method Bring 2-3 cups water to boil in a pan. Add salt and sponge gourd and cook for 10-15 minutes. Crush green chillies and garlic coarsely in a large rmortar with pestle. Transfer the cooked sponge gourd and continue to crush. For the tempering, heat oil in a pan. Add cumin seeds and once they start to change colour, add green chillies and raw peanuts, mix well and saute for 2 minutes. Add spring onion greens and mix well. Add the crushed gourd mixture and mix. Adjust salt and cook for 2 minutes.
