Ingredients

  • 15-20 blanched cauliflower florets
  • 2-3 tablespoons honey
  • ½ teaspoon red chilli flakes
  • 1 tablespoon red chilli sauce
  • 1-2 fresh red chillies, chopped
  • ½ cup refined flour
  • 1 tablespoon corn flour
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • Crushed black peppercorns to taste
  • Salt to taste
  • 1 tablespoon oil + for deep frying
  • 1 tablespoon finely chopped garlic
  • 2 spring onion bulbs, chopped
  • 1 teaspoon soy sauce
  • 1 teaspoon vinegar
  • 3 tablespoons chopped spring onion greens + for garnish
  • 2 tablespoons corn flour slurry
  • 1 teaspoon toasted black sesame seeds 
  • 1 teaspoon toasted white sesame seeds + for garnish

Method

  1. Take refined flour in a large bowl, add corn flour, onion powder, garlic powder, crushed black peppercorns, salt and ¼ cup water and whisk till a smooth thick batter is formed. 
  2. Heat sufficient oil in a kadai.
  3. Coat each cauliflower floret with the batter and gently slide into hot oil and deep-fry till golden and crisp. Drain on absorbent paper. 
  4. Heat 1 tablespoon oil in a non-stick wok. Add garlic and spring onion bulbs and sauté for 1-2 minutes. 
  5. Add red chilli flakes, red chilli sauce, fresh red chillies, soy sauce, vinegar, salt and 2 tablespoons spring onion greens and mix well.
  6. Add corn flour slurry, mix and cook for 1 minute. Add honey, mix and cook for a few seconds. 
  7. Add the fried cauliflower florets and toss till well combined. Add black sesame seeds and white sesame seeds and remaining spring onion greens and toss again. 
  8. Serve hot garnished with white sesame seeds and spring onion greens.
